Cheese Chicken Pesto Sandwich

Preparation Instructions

Wash hands. Grill chicken breasts until fully cooked and then cut into 1/2 inch slices. Brush olive oil to the top and bottom of the bread. Slice bread in half horizontally and apply pesto to the underside of the top slice and the topside of the bottom slice. Place the sliced chicken breast on the bottom slice of the bread, then top with provolone cheese. Dice the tomatoes and place on top of the provolone cheese. Layer the spring mix over the diced tomatoes. Place the top slice of the bread over the spring mix to form the sandwich. Place the sandwich on a hot panini grill until golden brown lines form on the top and bottom of the sandwich. Take the sandwich off of the panini grill, slice into four pie shaped pieces, and serve warm.
